We ran a Minecraft Edu server and a Craftbukkit server for an elective class consisting of seven 8th graders two years ago.  Students completed their first projects which can be seen on Manor Challenge page.  Two teams of two players completed Social Studies projects on Civil War Battlefield and their projects can be downloaded here.  You can see the student tour videos here
